Bartolotta Ristorante di Mare
Chef Paul Bartolotta has given his name to this classiest of Italian seafood restaurants, found on the Strip in the Wynn Las Vegas. Like everything else at the Wynn, the restaurant is inviting and luxurious, appointed with objets d'art and punctuated by a classic, spiral staircase going down to the lower level, where tables look out over a lake. In Bartolotta Ristorante di Mare, fresh fish is received from Italy every day, flown in especially for his dinner guests. Sea bass, snapper, and turbot are among the varieties that go into the elegant recipes - either baked in a salt crust on rare occasions or in one of several regional traditions, perhaps with olives, garlic and tomato. It addition to the seafood, guests can choose Agnolotti Piemontese, pasta asciutta, ravioli, chicken Ligure (artichokes, asparagus and porcini), and a large selection of other unusual and tempting dishes. The pasta e fagioli - usually not thought of as haut cuisine in Italy -- makes a gourmet entrance at Bartolotta. Deserts are a world unto themselves with inventive pastries, fruits and crème combinations.
