Craftsteak
Tom Colicchio is a James Beard award-winning chef, and the well-known creative genius behind Craftsteak. He demands the finest of meats, dairy and vegetables from small farms and the freshest of seafood from specialized suppliers. The underlying philosophy of Colicchio's cuisine is that diners appreciate simple dishes, well prepared from the best of ingredients. Thus, each menu item is extremely flavorful. Main dishes include not only Kobe beef and many other choices for the best in steaks, but also veal, fowl, salmon and lobster. Most dishes are either braised or roasted. Craftsteak is also well known for its short ribs. For a soup course, the lobster bisque is a favorite of Craftsteak's repeat customers. Because of the many different vegetable choices on the menu, Craftsteak has become known as a place where vegetarians can find delicious and exciting meals as well. The restaurant also offers a fixed price tasting menu (at around $210 for two with wine pairings for appetizer, main course and desert). Craftsteak won Epicuran's Best Steak House in 2005 as well as Best Restaurant Overall and Best New Restaurant on the Strip in preceding years.
