Michael Mina's Bellagio restaurant lies at the end of a path through the botanical conservatory of this elegant hotel resort. The executive chef, Anthony Amoroso, oversees the creation of all of Michael Mina’s dishes per the standards of this well-known seafood chef. The menu is elegant, flavorful, and unique. For example, the starting course could be a caviar parfait or a soufflé des moules noirs, topped with a cream sauces of chardonnay and saffron. If you like sole, the phyllo-crust Dover sole would be a great choice. It comes with a Dungeness crab brandade and sauce Dijon. Several choices are on the menu for lobster lovers, including a gourmet pot pie. A five-course tasting menu is available for those who have difficulty focusing on just one possibility.
