Prime Steakhouse
Jean-Georges Vongerichten (known to the cognoscenti as just “Vong” after his Thai-Vietnamese-French fusion restaurants of that name) has opened versions of his classic New York restaurant in several other cities of the world, including Las Vegas. Prime Steakhouse in the Bellagio is elegant in the traditional sense, with velvet drapes and the best is crystal and cutlery. The color scheme is chocolate brown and Tiffany blue. Original art is displayed throughout, including works by known contemporary artists. In the garden patio guests will enjoy a before-dinner drink or a relaxing post-dinner liqueur. Aged prime beef is the main ingredient of this restaurant’s culinary creations, prepared with precision. Foie gras, Carpaccio and steak tartare are all excellently rendered as appetizers, in addition to the shrimp, salads and other traditional elements of the steakhouse menu. Rack of lamb, encrusted in juniper and bathed in a pinot noir reduction is a dish that brings many patrons back for a second visit. For seafood lovers, the slow-baked salmon is an obvious selection. Other examples of Prime Steakhouse’s menu options are: ribbons of tuna with ginger marinade, Dungeness crab cakes, filet mignon with shishito peppers, the bone-in rib-eye, steak au poivre, braised short ribs, grilled peppered venison chop, Kurobuta pork chop, Chilean sea bass with chiles, herbs and lime, Dover sole, grilled ahi tuna, roast duck, parmesan encrusted free-range chicken in basil and lemon butter, Gruyère fritters with truffle salt, creamed spinach, onion rings, and, well the list keeps going on.
