Rick Moonen is the culinary artist behind this very sophisticated seafood restaurant in the shopping gallery at the Mandalay Bay Resort and Casino. On one level there is the R Bar Café and sushi bar. The main dining room is large, and several semi-private and private eating areas are on an upper level. “rm seafood” seeks to use only organically grown, sustainable produce and seafood ingredients. Only sustainable wines are on the wine list. Seafood meals include Maine lobsters, sampler plates of different kinds of shell fish from the raw bar, a large lump crab cake, Alaskan halibut, as well as other fish, steaks, poultry and even pasta. Creative deserts like a 16-flavor ice cream tasting game, or the key lime pie are on the menu, too. At the sushi bar a number of house inventions are available (like the “fireball roll”) as well as conventional sushi choices. The lunch menu includes smaller seafood plates, gourmet sandwiches and lighter fare. The chef offers a special, six-course tasting menu for $135.
