Roy's
Roy's is a series of Hawaiian restaurants, of which Las Vegas has two: one in Summerlin, and one on Restaurant Row, near the Strip. Roy Yamaguchi founded his first restaurant in Honolulu in 1988. He is the creator of a unique cuisine that results from fusing French, Polynesian, Japanese and some Chinese influences, with a "Nouveau American" twist. His dishes are well known for their colorful presentation in addition to the great variety of flavors and textures. Start off with a colorful cocktail (like their special mojitos and martinis). Roy’s also provides a separate menu, which offers a selection of popular sushi and sashimi choices, including house specialty rolls. Main courses are frequently spectacular. Roy’s is well known for the whitefish in macadamia crust with a sauce of lobster-cognac-butter. Seafood dishes really come in many varieties -- shrimp, scallops, lobster, mahi mahi, snapper and ono. Steaks, pork, duck and chicken also are featured on the menu, each in a different sort of tangy sauce, for which chef Yamaguchi is so well-known. Guests can also choose Hawaiian combinations and Polynesian appetizers, like the pot stickers of beef or lobster. Among desert choices, the pineapple upside-down cake is a crowd pleaser, and the chocolate soufflé is for those with a real sweet tooth.
