Tableau offers diners an elegant atmosphere in Wynn's Tower Suites lobby. The restaurant features breakfast, lunch and dinner options with grace and opulence. Red-velvet booths with butter-colored cushions line the interior of the restaurant and large French doors open up to a tranquil veranda where guests can dine under festive umbrellas. The American nouveau-style cuisine features appetizers like lobster baked clams with garlic brioche, Dungeness crab ravioli and a chilled shellfish platter. Entrées include poached wild salmon, potato crusted Dover sole, 35-day aged prime rib, and traditional surf and turf, with your choice of surf options.
There is also a seasonal market vegetarian menu with items like herb cavatelli, grilled asparagus salad, and a gruyere soufflé.
Tableau is a fine place to relax, enjoy simple, well-done American fare and forget all your worries.

Originally designed to be an exclusive restaurant for Wynn guests staying in the property’s posh villas, Tableau is now open to the public. The menus, previously overseen by Mark LoRusso, change with the seasons. We like the mango ricotta pancakes with honey lime butter for breakfast and brunch and the seasonal greens---winter citrus with baby beets and ricotta salata for brunch, lunch and dinner. Best among the fine winter soups is kabocha squash with duck confit and curry spätzle for dinner. Lunch entrées include a Kobe burger with aged cheddar on a sesame roll served with fries. Appealing dinner winners are Dungeness crab ravioli with lemon emulsion and ahi tartare with mango, avocado and soy vinaigrette. The butter-poached lobster is another favorite. We also like the Dover sole, potato-crusted and served with smoked bacon and spinach, and the crispy-skin snapper with roasted garlic gnocchi, oxtail ragoût and arugula. The nine-ounce filet of beef comes with potato purée and wild mushrooms. Coconut bread pudding with Amaretto sorbet and apple crisp with almond crunch ice cream are among sweet finales.
