Mexican cuisine among the world's most distinct and recognizable, a true international favorite. The very staples of Mexican gastronomy have become the basis from which many kinds of fast food have sprung. Burritos, or “taco de harinas” to give them their true label, are popular takeaway snacks we pretty much take for granted on a daily basis. In America, burritos are considerably larger than you'd find in Mexico, primarily because the wraps are mass produced. Tacos are another U.S favorite, although the crispy, ready-cooked versions you find at take-out diners are rather different to those of Mexico, which are usually soft and slightly floury. Fillings vary greatly, however taco carnitas (tacos with braised “little meats”) are a popular choice alongside tapas style buffets of fresh onions, tomatoes, peppers and salsa. Chili con Carne is a typically British favorite, yet its origins lie firmly in the South of Mexico where kidney beans are grown in abundance. It started life as a minced meat stew of sorts, packed out with onion, corn and chili to add that quintessential spiciness so loved by the Brits. We can't forget Tex-Mex, that meeting of two cultures on the U.S/ Mexico border that has borne some truly exquisite food fusions. Tex-Mex is really a pseudonym used to describe Americanized types of burrito, taco and enchiladas, all given the Texan treatment swapping minced meat for steak; salsa with gravy and fusing spice with melted cheese.
