Vegetarians know that the term covers a lot of territory and that precision often requires further explanation. Some vegetarians choose their path for the sake of health or pleasure, others for reasons of religion, and still others because of ethical or philosophical principles. In Las Vegas, “vegetarian” means simply the absence in the food of any meat, seafood or their derivatives. If you wish to rule out dairy and eggs as well, you can not rely on the use of the word “vegetarian” on the menu. Some people do not want to consume any animal product, including honey. It may be necessary to speak with the kitchen to be sure if choices are available. Many non-meat items may be prepared or cooked with animal fat. The most reliable vegetarian restaurants are Indian and those who advertise that they are 100% vegetarian (instead of just offering one or two vegetarian choices).
